Supreme Court's First Women and Maria Shriver's Speech

Listen, I am not a feminist at all but it doesn't hurt to hear words of wisdom from those women who made it to the ladder of success! Obviously, they're doing great because they somehow managed to be achievers in both their careers and marriages. And with the generation that we are in right now, it's somehow unlikely to be winners in both! Although, I know that there's a few of you out there who are committed to follow their example and I want to be one of them one day.

This is just an amazing speech and to all women out there, single, married, divorced, and widowed let's celebrate that we have something to offer the world, our country and to all our loved ones.

Mexican Chocolate Chicken

So, here's one comfort food that I would like to share with this cold weather. Chocolate Chicken, say what? (:

 Ingredients:

 500 lb. chicken breasts (I prefer to combine chicken thighs)
 flour to coat the chicken
 2 tsp. of butter
 2 cups chicken broth
 1 cup of white wine
 1 tbsp. coriander seeds
 1 tbsp. anise seeds
 1/2 girofle clove
 1/2 tsp. chilli (add more if you want it spicy)
 3 colored bell peppers
 3 big italian tomatoes cut in cubes
 1 tbsp. peanut butter
 1 tbsp. sesame seeds
 6 squares of dark chocolate (I use 70%)


Now, before you freaked out because of this gazillion ingredients, fear not! You can do it! I believe in you.  It's worth the effort.

Procedure:

1st Step:

1. Sliced onion + 2 tsp. of butter.
2. Put flour on each side of the chicken, then, brown chicken in a casserole starting side skin.
3. Combine the 2 cups of chicken broth + spices= 1 tbsp. coriander seeds, 1 tbsp. anise seeds, 1/2 tsp. girofle + 1/2 tsp. chilli powder boil in oven @ 400 F for 30-40 minutes.

2nd Step:

Cut 3 colored bell peppers add chicken, 3 italian tomatoes and a tsp. of peanut butter and the sesame seeds. Bake in 30 minutes.

3rd Step:

Remove chicken and mix the sauce and make a puree out of it. Put back chicken and add chocolate and cook on oven top until cook.

4th Step:

Bon appetit! (;

"Happiness Now" (As Seen on Oprah)



As a young child, I could say that I had a fairly good childhood.  Good stuff!

Growing up, I do hold on to my greatest hopes and dreams and asking for God's guidance that life would give me great experiences and learnings as I mature as a person. But life isn't just red roses...There were a few curb balls thrown my way, too! I had a hard time dealing with some of them however, the most important thing is that I had actually two options to choose from. I can be happy while facing and solving that challenge or be miserable throughout.

Right now, i came across a wonderful book entitled, "Happiness Now" by  Robert Holden, Ph.D. It gave me an amazing understanding about how we can really attain happiness in the now. It's funny how many of us right now are pursuing "happiness" without ever attaining it. I could only speak for myself, yes, there are times when we are in a hurry like that of that white rabbit in the movie, "Alice in the Wonderland".


We can't seem to focus and savor the moments and enjoy it by not worrying about the future. Sure, we need to think about our mortgage, debt, our kid's education, and so on and so forth however, the moment we let those anxiety take the moment of what should be a time to appreciate what's happening in real time, it robs us our real joy and happiness. While material things make us happy momentarily, it doesn't and will not substitute the deep meaning of it at all. I find that what matters most is our attitute towards life in general. The best things that constitute real happiness is when we have a great relationship with our creator, our family, friends and our self-acceptance.

 Do you remember, when you had a conversation with yourself, saying, "If only I get to work abroad, I will be happy", "If only I become a doctor, then I'll be happy", "If only I get married and have kids", and the list goes on and on. And finally, when that time happens, we got what we wanted, yet we find ourselves, still not happy, not satisfied, still wanting for more. Well, if we wait for that specific moment to come, then, we are robbing our happiness right now..I have no control with some things but I do have the right to choose to be happy now while waiting for my other dreams to come true. How about that? (;


 “One of the greatest single steps you can take to happiness now is to let go of the belief that happiness has to be deserved. You do not deserve happiness, you choose happiness. Happiness is natural. It is freely available to all. It is unconditional. And when you’re unconditional about happiness, then happiness merely happens! Happiness happens, if you let it.

I highly recommend this book to everyone. It made me appreciate life more and focus in the now while preparing myself of what lies ahead.  I will not let the future rob me of the happiness that I am experiencing right now. We owe it to ourselves.

"Grow Great by Dreams"

I just wanna share this very inspirational story about "Success".

Today, I am very happy that I finally received something that I've been waiting for so long. As a young girl, I dreamt of working abroad, travel the world and just being successful in whatever I do. And right now, I am living a dream. It's very humbling and I've realized so many things and hopefully become a blessing to others. And I still continue dreaming and reaching for great success and learn new things everyday.

The question was once asked of a highly successful businessman: "How have you done so much in your lifetime?" 

He replied, "I have dreamed. I have turned my mind loose to imagine what I wanted to do. Then I have gone to bed and thought about my dreams. In the night I dreamt about my dreams. And when I awoke in the morning, I saw the way to make my dreams real. While other people were saying, 'You can't do that, it isn't possible,' I was well on my way to achieving what I wanted." Is It Me or I Attract People to Open Up their Happy and Sad Tales?



Today, is a rather eventful day for me. I was on my way to work and met an old woman in her late 60's. She was standing with her cane while waiting for the bus. And so, I approached her and greeted her, "Bonjour!" However, she lost it and cried telling me that her son died at 40. She's rambling and she said, I'd rather want God to take my life instead of my son's. So, writing this entry right now is kinda heavy for me and for all of you who's following my blog. Anyways, I tried to console her and comfort her but I know that's there's no perfect words to ease the pain of a mother who just lost a son. Oh, well, I pray that she would survived this trial.




Then, just as I was trying to process what we had just discussed and telling me not to get married and don't have kids, so that I will avoid pain and the whole nine yards...Then, I got another call from a friend, who's also suffering from something and she's venting whatever it is that's bothering her. Gosh, I felt like my energy is drained and to give my time, and little bit of advice to people is really overwhelming but I felt blessed in a way that people find me approachable and that they can "open up" to me at anytime. Through the years, I have these tons of stories where close family and friends and strangers alike open their hearts out to me. It's so amazing and a blessing to be a part of their lives. I am grateful that even if I have my own "trials, challenges" or whatever you call it, I just forget them all and focused on helping others.

Life is indeed full of surprises everyday. We just have to be ready when to reach out and help those who needs us. I'd rather be of help. It makes my day and I feel good. And as for me, I thank God I was ready to help..Let us sow good deeds and do it with love.

I'm Craving for Some Oysters!

Coming from a country where we all love seafood, then it's just but normal that I would miss all of the sea fruits.

 Anyways, there's one time when I went to a grocery store and I happened to pass by a kiosk where a lady has been offering customers the Beausoleil Oysters. And I said, OMG! I need to go there and taste it myself..And voila, I ain't mistaken! I loved the very taste of it, the saltiness, the smell of the sea...Gosh, it reminds me of my life back home..




 So, today, I had this craving and I bought a few and a knife to open all these oysters. I went home and opened them one by one and got hurt in the process. I really didn't know that it's that hard to open these little monsters. (:  Of course, my patience paid off...I made a vinaigrette...

 Here's how:

   1 doz. of Beausoleil Oysters (whatever is available in the market is cool)
   white wine vinegar
   a hint of tabasco (for me, I put more since I like it spicy)
   chopped shallots
   lemon juice
   salt and pepper (optional)

It's a Feel Good Event-SHOPPING!!

Well, the rain was pouring and it feels like there's a big storm somewhere. But it didn't dampen our mood to go outside and do something productive and update our wardrobe.

 To all women out there,  majority of us wants to be pampered, spoiled and give ourselves a little bit of reward for all our hard work. And sometimes, shopping really do help if we are in a very low moment of our lives, and we can also go out there and pick something good even if we are not depressed..And whatever that challenge, this is one sure way of lifting yourself up, just make sure you know how to pay that VISA at the end of the month! LOL. As a woman, I must admit that going shopping is just a wonderful feeling be it alone or with your friends. And the feeling is a lot better if someone is so generous and thoughtful enough to buy and give you stuff! I am blessed and I am grateful.

Of course, I want to own a pair of Christian Louboutin. A Christmas wish... (:

Positivity: We Need to Pass it On!

I must say that I rejoice with the whole world today for rescuing those 33 Chilean miners back to safety and to be reunited with their loved ones once again and that's actually my blog entry yesterday. Well, that's not what I am about to share here.

As a person, I am quite proud of myself to say that I am taking the positivity path because not only it makes myself happy to get on with my life but it also affects the people around me. So, here's my little story to tell.

We all have days where we feel sad and blue and it's really hard to go on with life when we face something heavy, whatever it is. However, I met someone nice today and he gave me a lesson to learn for the rest of my life. We must have that positive attitude in order for us to be happy and it feels good to do good for yourself, your family, friends and co-workers. If you give way to being positive, you touch other people's lives in a way you could imagine. It may be a little smile while your walking on the streets, giving way to another driver on the road, pedestrian, a shoulder to cry on, a listening ear and whatever you can share then, pass it on! We need more of that people! Then, let our light shine and think of something what we can share to our town, city, village, country and to the whole world! And for all those pessimists out there, just friggin' ignore them. It ain't easy yet slowly but surely, learn how to ignore, delete and put a stop to it. If it's not helpful to you and me, then, it's not worth it! And oh yeah, do surround yourself with people who knows your value and worth and who supports you and let you grow to become a better person. (:

Miracles Do Happen, This Time in Chile!

I don't know about you but I always keep myself abreast to what's going on in the world, my country and the city that I'm in. I remember my mom saying, "Don't think about yourself only but also think about others and what's going on around you." So, from that time on, I opened my eyes to the world before me and think about something positive that I can contribute to the world I live in, in my own little ways of course.

Bowling Night!

Oh, yeah! I love them balls!
Well, my principle in life is that, while I work hard, I do know how to play harder. I just want to let loose after a long day at work and relax with my friends and just have a good laugh and have a good time. So, yesterday, me and my friends went bowling and we had a ball.

The English Language in 24 Accents

 I am interested in learning a new language from what I am accustomed to. Of course, I am used to my native tongue which is called, "Cebuano", "Bisaya," and so on and so forth. Living in a country with 7,100 islands, of course, the inhabitants has their own way of communicating. So far, I've learned that it has a good 165 dialects more or less, having Tagalog as our national language and English as second.

 Anyways, since I am exposed to different cultures and background back home and since I moved to Canada, a boyfriend would laugh at me everytime I impersonate the British accent. He said, it's awful! Bloody hell! He's funny!

 So, here is the guy who I find interesting and rockin it!!! Enjoy!

Just Wanna Share my Happiness!

Before the internet and digital world came in...I did my blogging already via my diary and journal and the whole nine yards.

As time goes by, I have to keep up with times. Long before the book entitled, "The Secret", was published and all it's teachings re: VISUALIZATION, I am doing that already...Gosh, I think I started that since I was 5 years old..LOL.

Right now, I've been blogging for a good 2-3 weeks about my life here in Canada, share something positive, anything that's funny, encouraging, interesting, keeping up with fashion, movies, make-up, even a simple random good act towards others and many others. The only thing is that, a very special person close to my heart said, keep doing it but don't share it to anyone yet because we want to be ready and we need to make things good before launching it. I've never been so excited and happy yet I must admit that I am kinda bothered for not sharing it to my family and friends. It's like I am keeping a BIG secret to them. But in a good way, though.

A very special person, close to my heart, is 150% supportive and backing me up with this dream..He emailed me the header graphic of this blog and I so LOooooooVEeeeeeeeeeT!!!! I am SPEECHLESS and GLAD and I can't believe that one of my dream coming true... I dreamt of having my own WEBSITE where I can be a BLESSING to someone's life. And here I am starting to see the fruit of my labor...

Nectarine Cupcakes

Topping:
 1 cup heavy cream
 1/2 cup sour cream
 3 tbsp. sugar

Ingredients:
 1 1/4 cup all-purpose flour
 1/2 tsp. baking powder

 1/2 tsp. salt
 1/3 cup milk
 1 tsp. vanilla
 6 tbsp. butter
 3/4 cup sugar
 2 eggs
 2 nectarines (cut in small pieces)

Combine all the ingredients with the use of an electric mixer until smooth. And put 2 tbsp. of batter in each cupcake cups and bake for 350 C for 25 minutes or until golden brown.

The Street is my Runway!

As a little girl, I dreamt of becoming a model. I can still vividly recall all those crazy beauty contests starting when I was literally a toddler until I entered high school. (:

However, growing up I discovered that I wasn't blessed with height, so, I just have to accept the fact that I wouldn't be able to really walk the runway. So, I decided, to make the street my runway and strut it like a model anyways! At the end of the day, we should feel good, dress good, accept all our flaws and learn how to enjoy our life in whatever situation we are all in...

According to Victoria Beckham, "The airport is my runway." So, celebrity or not we all have the right to act, walk and strut like models on the runway...
